Well lunch was interesting today. I actually found myself at a Senior Citizen facility where the veggie plate was touted to be the bomb. I did have a great lunch of green beans, brown rice, salad with hard boiled egg and cornbread all for $3.21.
Dinner was tortellini with cheese and green beans!!! So good. I am loving trying different takes on meals. I've convinced 3 people to start with me and go through till at least Easter (veg out for Lent)! Anywhoo ...till the next post!
Veg out!!!!

First Day on Vegetarian Journey
Today it started....with 12 grain toast, an apple and orange juice. I am officially vegetarian. No more Chick-fil-A drive thru for morning chicken biscuit combo - 5 bucks and 2000 calories. I know what it tastes like, I know what fried chicken taste like and I know what ribs taste like....time for a break.
So far it's thirty minutes shy of noon and I have been grazing all morning on apple and tomato wedges. I feel fine....
Did I mention that I am 4 months pregnant? This should be hard, but I have a strong feeling that because I'm getting healthier for the baby and for myself....it will be a breeze. The most important thing that I must remember is to take my pre-natal vitamins daily and get enough protein. I have beans soaking at home for dinner. Let's see if I can convert my hubby and daughter!
